Our '2024 First Edition' is bold, innovative and light golden in colour.  On the palate you will discover creamy caramel, with spicy, nutty notes finishing with fresh vanilla, old fashioned toffee and apricot.

Tasting Notes:

Aroma = Cereal, heather, truffle, floral. Faint linseed.
Palate = Sugar puffs, truffle oil, clove, fennel, violets.

Conclusion = Full bodied, punchy heat becoming glyceric with 5ml of water. Hot and heady. Predominately savoury with sweet edges. Grown up and commanding. Barrel action is minimal and frames the character of the primary spirit which is full of vigour and complexity.

Whittaker's American Bourbon-style Whiskey Release is a single virgin oak cask 58.1% ABV Cask strength and is made in the traditional way using 75% corn and also Laureate barley.  This is the first ever American Bourbon-style whiskey to be produced in the Yorkshire Dales. 

The sweetness from the corn and grain gives off notes of caramel and honey.  The oak influence gives notes of baking spices like cinnamon and clove. The finish lingers with continued flavours of vanilla and toffee.

There are two options for this product:

A single bottle which is £85

or

A large presentation box the same as the First Release Whisky which has the bottle of Against the Grain Whiskey and 2 x Glencairn glasses which is £125.

We take great care to ensure all the ingredients which go to create our whisky, are carefully selected. The water is from the spring on our farm and the barley is grown at the end of the river Nidd on another family farm, Poplars Farm, Ferrensby owned by Andrew and Ione Cumming (née Whittaker).

1x Orange bitters
15ml Genroku Redux,
5 D.O.M. Benedictine
50ml Whisky
Stir with Orange peel.
